How To Make Homemade Ginger Spice Muffins

When it comes to fall baking, I really enjoy making these homemade ginger spice muffins for my family and friends. They are absolutely perfect with a cup of coffee or herbal hot tea.

The recipe calls for ingredients that you most likely have in your pantry. You will need to allow approximately 15 minutes for preparation time and an additional 25 minutes for baking.

We like to serve our muffins with some homemade apple, honey or pumpkin butter. If you have any leftovers, store them in an airtight container on your countertop.

Ginger Spice Muffins Recipe

1 3/4 cups all-purpose flour
2 tablespoons granulated sugar
3 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon table salt
1/4 cup butter or margarine, melted
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 cup milk

Preheat oven to 350 degrees.

In a large mixing bowl, combine together the all-purpose flour, granulated sugar, baking powder and baking soda until blended. Stir in the ground cinnamon, nutmeg, ginger and the salt. Melt butter in your microwave, but don't over heat it. Pour in the melted butter. Stir in the egg, vanilla extract and milk. Mix everything together until the ingredients are well combined, your batter should be a little lumpy.

Grease a muffin tin or line your tin with paper liners. Spoon batter into cups, filling them 1/2 way full. Bake for 20 to 22 minutes in a 350 degree oven until they are done. This recipe will make approximately 12 muffins.
